Superfuel bars!
So we just got back from our little adventure in Wales. After finishing my degree we both figured we deserved a break and what better place to go than one of the most beautiful places in England - the Brecon Beacons National Park, Wales. We will be doing a separate post all about it/the places we visited/food we munched etc, but for now I'd like to share with you my own little recipe for a sort of granola/flapjack bar type thing - We're calling them Superfuel bars because they really do give you a little boost of energy (which is something we needed after a morning 5 mile canoe down the river Wye) This recipe is pretty much just a basic guide as you can add/remove anything you want - it's something I am still experimenting with and always coming up with new combinations, so i'd love to see what you come up with too. They are full of healthy things and give you a natural energy boost as opposed to the not-so-healthy sugar filled supermarket bars.

Ingredients
2 really ripe mashed bananas
2 cups of oats
1/4 cup almond milk
1/3 cup apple sauce
1 Tbsp cinnamon/mixed spice
*Mix together and then add your favourite extras*
1 Tbsp flax seed / chia seed (I used both)
1/4 cup raisins (you could use sultanas, diced dates, cranberries... it's up to you!)
1/4 cup seeds/nuts (I used a mix of sunflower seeds, pumpkin seeds & golden linseed)
1/4 cup desiccated coconut
*Mix & bake!*
Line a square baking tin with baking parchment / lightly grease with coconut oil
Bake at Gas 4 / 180 degrees C for 15-25 minutes
Let them cool before cutting into bars
These are really good to take with you on the go, as a post-workout snack (as there is lots of natural protein in there) or just as a healthier alternative to a flapjack with your cuppa.
